Here is a different take on potato soup ~ I personally add more hot pepper sauce because we like our foods SPICY…..

1 pound ~your choice ground beef or turkey

4 cups cubed peeled potatoes ( about 1/2 inch cubes)

1 small onion~ chopped

3 cans (8 oz. each) tomato sauce

4 cups water

2 teaspoons salt

1  1/2 teaspoos pepper

1/2 to 1 teaspoon hot pepper cause ( like Tabasco or I use Cholula) and I use more to our taste ūüôā

~ In a large pot, brown your ground meat. Add potatoes, onion and tomatoe sauce. Stir in water, salt, pepper, and hot sauce, bring this to a boil. reduce heat and simmer for 1 hour or until the potatoes are tender and the soup has thickened…Note…make sure you start with a small amount of hot sauce and adjust to YOUR taste! As always~~ Mangia! ūüôā

~~Yummmmm~ I LOVE Peanut Butter and Chocolate…marry them up together…YUMM….Who can resist a tempting chocolate crumb crust and a creamy filling with BIG Peanut Butter taste? Be PREPARED… the pan will be empty when you serve this pie!!! This is a QUICK fix pie, and NO oven!! They do sell a graham cracker chocolate crust~ BUT in case you can’t find that here is a recipe for the crust as well.


1 1/4  cups chocolate cookie crumbs( About 20 cookies)

1/4 cup sugar

1/4 cup butter or margarine (melted)



1 package ( 8 oz.) cream cheese, (softened)

1 cup creamy peanut butter

1 cup sugar

1 Tablespoon butter or margarine, softened

1 teaspoos vanilla extract

1 cup heavy cream, whipped

Grated chocolate, OR chocolate cookie crumbs~ OPTIONAL

~ Combine crust ingredients, press into a 9 inch pie plate. Bake @ 375 for 10 minutes. Cool. In a mixing bowl, beat cream cheese, peanut butter, sugar, butter, and vanilla until smooth. Fold in whipped cream. Gently spoon into crust. Garnish with chocolate and cookie crumbs…..¬†IF DESIRED ūüôā ~ Refrigerate…and as always~~ MANGIA!!

Here’s a WONDERFUL way to top off a great meal~ A rich, chocolaty cake that’s not overly sweet. You can always serve it with a scoop of ice cream or your favorite whipped topping.

1 cup all~ purpose flour

3/4 cup sugar

6 Tablespoons baking cocoa, DIVIDED

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

2  Tablespoons oil

1 teaspoon vanilla extract

1 cup brown sugar

1 ~ 3/4 cups Hot water

Optional Ice cream/whipped topping


~ In a medium bowl, combine flour, sugar, 2 Tablespoons cocoa, baking powder, and salt. Stir in milk,oil,and vanilla until smooth. Spread in an ungreased 9 inch square baking pan. Combine brown sugar and remaining cocoa: Sprinkle over batter. Pour hot water over all: do not stir. Bake @ 350 for 35~40 minutes. Serve warm. Top with ice cream or whipped topping~~ If you so desire~Mangia!

This is an easy recipe, CONVENIENT, affordable, and GOOD tasting. You can use ground beef, turkey, or chicken. This is a filling sandwich, and is one of our favorites. I have some picky eaters at my house…so I do some adjusting…I make one half of the loaf with the tomatoes and green peppers, the other half gets the filling and cheese.¬†I¬† have also substitude the chopped onions and use onion powder, again, start with like a 1/2 tsp. and mix, then see if it is to you taste liking.¬†It still turns out just as good, so use what you have in the pantry or what you like according to your taste buds!!! This feeds about 6 so, you can always half the recipe for less servings. Any left overs we warm up and it is just as tasty!

2 Pounds of your choice ground meat

1/2 cup chopped onion

1 tsp. salt

1/2 tsp garlic powder

1 loaf French Bread or Italian Bread~ YOUR choice

Butter or Margarine, softened

1 cup (8 oz.) Sour Cream

1 can Cream Of Mushroom 10 oz.¬†( If you don’t like this~ Then add 2 cups sour cream)

2 tomatoes seeded and diced

1 large green pepper, diced

3 Cups (12 oz.) shredded cheddar cheese

~ In a skillet, brown the ground meat and onions. Add salt, garlic powder, pepper, and Cream of Mushroom ,mix well. ¬†Cut bread length wise in half: Butter both halves and place on baking sheets.¬† Remove meat mixture from the heat: Stir in sour cream. Spoon onto the bread. Sprinkle with tomatoes, green pepper and cheese. Bake @ 350 for 20 minutes or until cheese is melted. Bake longer if you want the bread crisper…Mangia!!

I love artichokes and bacon~ What’s not to LOVE~ This recipe has BOTH~~ It is so good!!~ Serve on your FAVORITE pasta~

  • 2¬†ounces lemon juice
  • 1¬†ounce white wine
  • 2¬†ounces heavy cream
  • 1¬†/2 lb. butter
  • 3¬†(3-4¬†ounce)¬† chicken breasts, pounded thin~ or you can get¬†it tenderized from the store….
  • Oil, for sauteing chicken
  • Butter, for sauteing chicken
  • 1/2-¬†cup flour, seasoned with
  • Salt & Pepper, for coating
  • 3¬†ounces Pancetta~ I use BACON~ about 6 cooked slices.
  • 6¬†ounces mushrooms, sliced
  • 6¬†ounces artichoke hearts, sliced
  • 1¬†tablespoon capers ~ You can omit if ya don’t like~ I personally add more cause I like em! ūüôā
  • 1/2¬†lb capellini, cooked
  • ¬†parsley, for garnish
  1. To make the sauce: Heat the lemon juice and white wine in a saucepan over medium heat.
  2. Bring to a boil and reduce by one-third.
  3. Add cream and simmer until mixture thickens (3-4 minutes).
  4. Slowly add butter until completely incorporated.
  5. Season with salt and pepper.
  6. Remove from heat and keep warm.
  7. Cook pasta and drain.
  8. Heat a small amount of oil and two tablespoons butter in a large skillet.
  9. Coat chicken in flour and saute in pan, turning once, until brown and cooked through.
  10. Remove chicken from pan and add to pan remaining ingredients.
  11. Heat until mushrooms soften and are cooked; add chicken back to pan.
  12. Place cooked pasta on each plate.
  13. Add half of butter sauce to chicken mixture and toss.
  14. Taste and adjust, adding more sauce if needed.
  15. Place chicken mixture over pasta.
  16. Garnish with parsley~ Can also us dired~ Just sprinkle for garnish
  17. Alternately, mix pasta and chicken mixture together.
  18. Toss with butter sauce…
  19. Mangia~ As Momma would say!!

Serve with a side salad, garlic bread and olive oil for dipping!!

This is a family favorite. I make it especially around the holidays when the whole family is getting together. It is¬† great¬† for breakfast with coffee or hot cocoa~ or a after dinner dessert~ It’s all GOOD!


1 Package frozen dinner rolls~ 24 count

1/2 cup Sugar

1/2 cup Brown Sugar

1 1/2 Tsp. Cinnamon

1 Pkg. Butterscotch Pudding~ NOT Instant

1/2 cup Pecans~ OPTIONAL

1 stick Butter~ Melted


Remove frozen dinner rolls ahead of time. Grease a bundt pan. Mix sugars, pudding and nuts. Seperate half the dinner rolls, and stack in bundt pan. Sprinkle 1/2 of the mixture over the rolls. Stack the remaining rolls. Sprinkle the rest of topping over top.

Melt butter and pour over the top. Cover loosley and let rise overnight. Bake @ 350 about 40 minutes~ or until done….Buon appetito always!

This is a great soup to enjoy anytime of year. It is quick and easy~ and best of all Delishhhhhh!!!

1 lb ground Italian sausage
1¬Ĺ tsp crushed red peppers
1 large diced white onion
4 Tbsp bacon pieces
2 tsp garlic minced
10 cups water
5 cubes of chicken bouillon
1 cup heavy cream
1 lb sliced Russet potatoes, or about 3 large potatoes
¬ľ of a bunch of kale
Sauté Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients.
In the same pan, saut√© bacon, onions and garlic for approximately15 mins. or until the onions are soft…
Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic. Cook until boiling.
Add potatoes and cook until soft, about half an hour.
Add heavy cream and cook until thoroughly heated.
Stir in the sausage.
Add kale just before serving…..Mangia!!!

Awhhhhhh~~ A childhood favorite and STILL one of our favorites!! I also make these upon request and leave the chocolate out, BOTH ways are DELISHHHHH!!! Another quick dessert, and no baking!!!

2 cups Sugar
1 Stick Margarine or Butter

 1/2 cup Milk
4 Tablespoons Cocoa

Mix above well and Boil hard over medium heat for 2 minutes.

Remove from heat and add:
1/2 cup Peanut Butter
Dash of Salt
1 Tsp. Vanilla
3 Cups Oatmeal ~ Quick ~ 1 Minute Type

Mix well, and drop by spoonfulls onto waxed paper. Store in airtight container…..Enjoy~~ Mangia!

Here is a FAST and very good pie. Especially with the HOT summer months on us this is so refreshing and no turning on the oven!!


3) 14 oz. cans sweetened condensed milk
3/4 cup key lime juice
16 oz. whipped cream topping
(2) 9″ ready-made graham cracker pie crusts.

In a medium bowl, whisk together the whipped topping, condensed milk, and lime juice until smooth. Spoon the mixture into graham cracker crust and smooth the surface with a spatula.

Set in the freezer until firm, about 30 minutes. Sprinkle lime zest over the top before serving.. Mangia!!!!

Today I am going to give you a QUICK recipe that my Momma made. It is very easy, quick, very FRESH tasting, and LOW cost!! Serve it with a side salad, garlic bread, and you can even get some Italian Sausage and fry it up in the link to serve with this…or just plate this and call it Dinner!

Use your favorite pasta, and cook that ahead according to the directions….

1 box ~ of you choice Pasta~~
1 clove garlic, minced
2 teaspoons extra virgin olive oil
1 pint ( bag) cherry tomatoes,washed, halved
to taste salt
to taste ground black pepper
5-6 leaves Basil, sliced into thin strips,OR you can use dried Basil~~Again…I use about 2 Tsps. BUT go by your taste..:)
¬Ĺ cup Parmesan cheese, grated

COOK pasta according to package directions.
MEANWHILE, in a large skillet, sauté minced garlic in olive oil over medium heat until slightly yellow.
ADD cherry tomatoes and sauté 2 minutes. Season with salt and pepper, and remove from heat.
DRAIN pasta, reserving ¬Ĺ cup of cooking liquid.
TOSS pasta with cherry tomatoes, garlic and half the basil.
ADD reserved cooking liquid to skillet and toss pasta again.
TOP with grated Parmesan cheese and remaining basil~~ Mangia!!!
