I have been such a slacker in doing what I love and that is
sharing the tons of recipes I have. I’d be in the kitchen 12 hours a day trying
different recipes if I could. I guess the love to do that comes from my Mother.
She was a awesome cook and baker, and Mother and wife. Thank you Mom for all
that you taught me!!!
One of my New years resolutions is to seriously post a new
recipe each day.
As this year comes to a close, I pray Love, Hope,
Joy
and Peace be with you always and Blessings for you and your
families this coming 2012!

I have been so bad about posting new recipes!! Now that I have family not
feeling well, I plan to make them dinner today, SO that being said, following
this post, I will post a recipe for Chicken and Rice. Something GOOD and hearty.
Also I am still in search of the “Perfect” Chocolate Chip Cookie, which, I am
going to be testing yet another recipe for that! Yummmm Cookies &
Espresso…makes me HAPPY! Be BLESSED!
I “LOVE” Apples, Apple Pie, Apple cake, apples & peanut butter~ You get the picture . SO I came up with this “SIMPLE” Apple Dump Cake.
WHAT YOU NEED!!!
2 Cans Apple Pie Filling
1 Box Spice Cake Mix
1 Stick Melted butter
MAKE IT!!!
Preheat oven to 350* Degrees. Spray a 9 X 13 Pan with a non stick spray. Line the bottom of the pan with both cans of Apple pie filling. Sprinkle on top  evenly the Spice Cake Mix. Melt the stick of butter and drizzle over all the top. Bake @ 350* for about 40 minutes…until you can see the top where the butter is, is golden.
This is DELISHhhhhhhhhhhh. It is not a really sweet desert. You can taste the apples and all the spices from the cake!!
Mangia!!!
NOTE: You can add 1 cup of pecans or any nut of your choice, ON TOP of Apple Pie filling!

DELISH~ with the sugary-cinnamon crumb topping, can we say YUMMMM~ Can double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. I have tired two different add ins on the Fluffy Pancakes. You can either peel and thin slice a Granny Smith apple, or shred the apple and add to the pancake mixture at the end when mixing right before cooking. I also added a 1/4 tsp of cinnamon.  You can also add a cup of fresh blueberries, and also add the 1/4 tsp of cinnamon.

Both ways are DELISH!!

Buon appetito always!

WARNING~ WARNING~ WARNING~~These are so yummy, light, and fluffy, you could eat  your weight in them! They were so easy to make that there is no need to buy box mix any more. Why buy something that has so much junk in it so it can last on the shelf for 3 years when you can whip this up in 5 minutes???  Once your pan is hot, they will cook very fast so pay CLOSE  attention. Do not be concerned about the “sour” milk. Milk and vinegar is homemade buttermilk. Your pancakes will not taste sour. It helps make them  to be fluffy and tender. Mangia!!!!

  • 1/2 teaspoon salt
  • 1 egg
  • 1 tsp. vanilla

MAKE IT!!!

Directions

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Add vanilla then to the wet ingredients. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
